Easy Cheesy Broccoli and Chicken Rice Bowl

1 cup cooked white rice (or brown rice)

2 cups broccoli florets (fresh or frozen)

1 lb boneless, skinless chicken breasts, cubed

1 cup shredded cheddar cheese (or cheese of your choice)

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the cubed chicken breasts. Season with salt, pepper, garlic powder, onion powder, and paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove from the skillet and set aside.

    Steam the Broccoli: In the same skillet, add the chicken broth and bring it to a simmer. Add the broccoli florets, cover the skillet, and steam for about 4-5 minutes until the broccoli is bright green and tender but still crisp. Remove the cover and let the liquid reduce for a minute.

      Combine Ingredients: Return the cooked chicken to the skillet with the broccoli. Stir to combine and heat through for another 1-2 minutes.

        Cheese it Up: Reduce the heat to low. Sprinkle the shredded cheddar cheese over the chicken and broccoli mixture, covering it evenly. Cover with a lid to allow the cheese to melt, about 2-3 minutes.
