Easy Cheesy Cauliflower and Chicken Bake

1 medium head of cauliflower, cut into florets

2 cups cooked chicken, shredded or diced (rotisserie works great)

1 cup shredded cheddar cheese

1 cup milk

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (panko for extra crunch)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cauliflower: In a large pot of boiling salted water, blanch the cauliflower florets for about 3-4 minutes until they are slightly tender. Drain and set aside.

      Make the Cheese Sauce: In a medium saucepan, combine the milk, cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Cook over medium heat, stirring continuously until the mixture is smooth and creamy. Remove from heat and stir in the cheddar and Parmesan cheese until fully melted.

        Combine Ingredients: In a large mixing bowl, combine the blanched cauliflower and cooked chicken. Pour the cheese sauce over the mixture, ensuring everything is well coated.

          Assemble the Bake: Transfer the cheesy cauliflower and chicken mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Add Topping: In a small bowl, mix the breadcrumbs with a drizzle of olive oil (to help them crisp up). Sprinkle the breadcrumb mixture evenly over the top of the bake.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and bubbly.

                Garnish & Serve: Once out of the oven, let it cool for 5 minutes. Garnish with freshly chopped parsley and serve warm.
