1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

8 oz (225g) fettuccine pasta

1 cup (150g) frozen peas

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and add fettuccine. Cook according to package instructions until al dente. Once cooked, reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces. Season with salt and pepper. Cook for about 6-8 minutes until the chicken is browned and cooked through. Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the heavy cream, stirring continuously.

        Combine Ingredients: Gradually whisk in the grated Parmesan cheese until smooth. Season with Italian seasoning, and adjust salt and pepper as needed. Let simmer for 2-3 minutes until the sauce thickens slightly.

          Mix Everything Together: Add the cooked fettuccine, chicken, and frozen peas to the skillet. Toss everything together, adding reserved pasta water as needed to reach your desired sauce consistency.

            Serve: Remove from heat, garnish with fresh parsley, and serve immediately.
