1 lb (450g) boneless, skinless chicken thighs, diced

1 cup uncooked long-grain rice

2 cups low-sodium chicken broth

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

1 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro or parsley, chopped (for garnish)

Juice of 1 lime (optional)

Instructions
 

Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken thighs and season with salt, pepper, chili powder, and smoked paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion and red bell pepper. Sauté for about 3-4 minutes until the onion is translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.

      Add Rice and Broth: Stir in the uncooked rice, corn kernels, and chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-18 minutes, or until the rice is tender and has absorbed the liquid.
