Ingredients

4 cups broccoli slaw mix (fresh or pre-packaged)

1 cup shredded carrots (about 2 medium carrots)

1/2 cup red cabbage, thinly sliced

1/2 cup mayonnaise (or Greek yogurt for a lighter option)

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

1/4 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

Instructions

Prepare the Veggies: If using fresh broccoli, cut off the florets and slice them thinly along with the stems. Combine the broccoli slaw, shredded carrots, and red cabbage in a large mixing bowl.

Make the Dressing: In a separate medium-sized bowl, whisk together the mayonnaise (or Greek yogurt), apple cider vinegar, honey, and Dijon mustard until smooth and creamy. Adjust the sweetness by adding more honey if desired.

Combine: Pour the dressing over the slaw mixture. Toss everything together until the vegetables are well coated with the dressing.

Season: Taste the slaw and season it with salt and pepper as needed. You can add in the chopped walnuts or pecans for extra crunch and the dried cranberries or raisins for a sweet component if you like.

Chill: Cover the slaw with plastic wrap or a lid and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully.

Serve: Give the slaw another quick toss before serving. Enjoy it as a refreshing side dish or a light lunch!
