1 medium yellow onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream or coconut milk (for a vegan option)

1 tablespoon sugar (optional, to taste)

Salt and pepper, to taste

1/2 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for a little heat)

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once heated, add the diced onion and sauté for 5-7 minutes until translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir to combine and bring the mixture to a simmer. Allow it to simmer for about 15 minutes, stirring occasionally.
