For the Chicken Marinade:

1 pound boneless, skinless chicken thighs

4 tablespoons olive oil

2 tablespoons red wine vinegar

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

Juice of 1 lemon

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon red wine vinegar

Salt and pepper to taste

For Assembly:

Pita bread or flatbreads

Sliced tomatoes

Shredded lettuce

Sliced red onion

Feta cheese (optional)

Kalamata olives (optional)

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine the olive oil, red wine vinegar, oregano, garlic powder, onion powder, salt, black pepper, paprika, and lemon juice.

      - Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to overnight for more flavor).

        Prepare the Tzatziki Sauce:

          - In a medium bowl, mix together the Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, olive oil, dill, red wine vinegar, and a pinch of salt and pepper. Stir well until combined. Adjust seasoning to taste and refrigerate for at least 30 minutes to let the flavors meld.

            Cook the Chicken:

              - Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting excess marinade drip off.

                - Cook the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from heat and let rest for a few minutes.

                  Slice the Chicken:

                    - Once the chicken has rested, slice it into thin strips.

                      Assemble the Gyros:

                        - Warm the pita or flatbreads on the grill for about 1 minute on each side.

                          - Place a generous amount of sliced chicken in the center of each pita. Top with shredded lettuce, sliced tomatoes, red onion, a dollop of tzatziki sauce, and crumbled feta, if desired. Finish with a few Kalamata olives for an extra touch.

                            Wrap and Enjoy:

                              - Fold the pita over the filling, securing it like a taco. Serve immediately while warm!
