Easy Grilled Thai Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 tablespoons lime juice

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 tablespoon vegetable oil

Fresh cilantro, for garnish

Lime wedges, for serving

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

In a medium mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, ground coriander, and turmeric powder. Whisk until well blended.

    Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat your grill to medium-high heat. If using a grill pan, heat over medium-high on the stovetop.

        Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

          Brush the grill grates with vegetable oil to prevent sticking, then place the skewers on the grill. Cook for about 6-8 minutes per side, or until fully cooked and the edges are slightly charred. The chicken should reach an internal temperature of 165°F (75°C).

            Remove the skewers from the grill and let them rest for a few minutes.

              Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the skewers.
