8 oz (225g) rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

1/2 cup black olives, pitted and sliced

1/2 cup salami, cut into strips

1/2 cup mozzarella balls (bocconcini), halved

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/3 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, olives, salami, and mozzarella into bite-sized pieces. Add these to the bowl with the cooled pasta.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, and a generous pinch of salt and pepper. Taste and adjust seasonings if necessary.
