1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups vegetable broth (or water)

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach (or baby kale)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Rice: Begin by rinsing the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and vegetable broth (or water) and bring it to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes, then fluff with a fork.

    Sauté the Shrimp: While the rice cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, stirring continuously to avoid burning.

      Cook Shrimp: Add the shrimp to the skillet. Season with red pepper flakes, smoked paprika, salt, and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.

        Add Lemon: Pour in the lemon juice and add the lemon zest, stirring to coat the shrimp evenly. Allow it to cook for an additional minute, then stir in the cherry tomatoes and spinach, cooking just until the spinach wilts and tomatoes are slightly softened (about 2 minutes).
