1 tablespoon olive oil

1 medium onion, diced

2 large carrots, diced

2 stalks celery, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

4 cups low-sodium chicken broth

1 pound cooked chicken breast, shredded or diced

1 cup half-and-half (or heavy cream for a richer taste)

1 1/2 cups potato gnocchi (store-bought)

2 cups fresh spinach, roughly chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Fresh parsley, for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender and the onion is translucent.

    Stir in the minced garlic, dried thyme, dried basil, and red pepper flakes (if using). Cook for an additional minute until fragrant.

      Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to a simmer.

        Add the shredded chicken and potato gnocchi to the pot. Let it simmer for about 3-5 minutes, or until the gnocchi float to the top and are cooked through.

          Stir in the half-and-half (or heavy cream) and chopped spinach. Continue cooking until the spinach is wilted and the soup is heated through, about 2-3 minutes.
