3 cups all-purpose flour

1 packet (2 1/4 teaspoons) active dry yeast

1 tablespoon granulated sugar

1 teaspoon salt

1 tablespoon unsalted butter, melted

1 cup warm water (110°F/43°C)

1/4 cup baking soda

1 large egg (for egg wash)

Coarse sea salt (for topping)

Optional: 1 teaspoon garlic powder or finely chopped herbs for flavor

Instructions
 

Activate the Yeast: In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.

    Make the Dough: In a large mixing bowl, whisk together the flour and salt. Add the melted butter and the activated yeast mixture to the dry ingredients. Mix until a dough forms.

      Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm area for about 1 hour, or until doubled in size.

          Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

            Shape the Rolls: Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and place them close together in a greased or parchment-lined baking dish.

              Prepare the Baking Soda Bath: In a large pot, bring 4 cups of water to a boil and carefully add the baking soda. Reduce the heat to a simmer.

                Boil the Rolls: Carefully drop the shaped rolls into the boiling soda bath, a few at a time, for about 30 seconds each. Use a slotted spoon to remove them and place them back on the baking sheet.

                  Egg Wash and Season: Beat the egg in a small bowl and brush it over the tops of the rolls. Sprinkle with coarse sea salt. If using, sprinkle garlic powder or herbs at this stage.

                    Bake: Bake in the preheated oven for about 15-20 minutes, or until golden brown.

                      Cool and Serve: Allow the rolls to cool for a few minutes before pulling them apart. Serve warm with your favorite dipping sauces like mustard or cheese.
