Easy Shrimp Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 pound large shrimp, peeled and deveined

2 tablespoons vegetable oil (or sesame oil for added flavor)

1 cup mixed vegetables (peas, carrots, and corn)

2 eggs, lightly beaten

3 green onions, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil (optional)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Rice: If you haven't used day-old rice, cook jasmine rice, spread it on a baking sheet to cool, and refrigerate for at least an hour. Cold rice works best for fried rice.

    Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp, seasoning with a pinch of salt and pepper. Sauté until the shrimp turns pink and opaque, about 2-3 minutes. Remove from the skillet and set aside.

      Scramble the Eggs: In the same skillet, add the remaining tablespoon of oil. Pour in the beaten eggs and scramble until fully cooked. Remove the scrambled eggs from the skillet and set aside with the shrimp.

        Sauté Aromatics: In the same skillet, add the minced garlic and chopped green onions, stirring for about 30 seconds until fragrant.

          Add Vegetables: Toss in the mixed vegetables and stir-fry them for about 3-5 minutes until tender-crisp.

            Fry the Rice: Add the cold rice to the skillet, breaking apart any clumps. Stir-fry the rice with the vegetables for about 4-5 minutes, allowing it to get crispy in some areas.

              Combine Everything: Return the cooked shrimp and scrambled eggs to the skillet. Pour the soy sauce and oyster sauce over the rice, mixing well to combine all the ingredients. Adjust with salt and pepper as needed.

                Add Last Touches: Drizzle with sesame oil for extra flavor and mix well.

                  Garnish: Remove from heat, and garnish with fresh cilantro or parsley if desired.
