Easy Shrimp Fried Rice with Peas

1 cup uncooked long-grain rice

2 cups shrimp, peeled and deveined

1 cup frozen peas

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

3 green onions, chopped

2 garlic cloves, minced

2 eggs, beaten

Salt and pepper to taste

Cooking oil (vegetable or canola)

Instructions
 

Start by cooking the rice according to package instructions. For best results, use day-old rice or let freshly cooked rice cool completely before frying to prevent clumping.

    Heat a large skillet or wok over medium-high heat, adding about 2 tablespoons of cooking oil.

      Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant.

        Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes until they turn pink and opaque. Remove from the skillet and set aside.

          In the same skillet, add the beaten eggs. Allow them to cook for about a minute, stirring gently to scramble. Once cooked, push them to one side of the skillet.

            Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together gently.

              Add the frozen peas and the cooked shrimp back into the skillet. Stir everything to combine and cook for an additional 2-3 minutes until heated through.

                Finally, add the chopped green onions and give the fried rice one last toss. Taste and adjust seasoning with more salt or pepper if needed.

                  Serve warm and enjoy your flavorful shrimp fried rice!
