1 lb (450g) beef stew meat, cut into cubes

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 medium potato, diced

1 can (14.5 oz) diced tomatoes with juice

4 cups beef broth

2 cups water

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Fresh parsley for garnish (optional)

Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Sear the meat on all sides until browned (about 5-7 minutes). Remove the beef from the pot and set it aside.

    Sauté Vegetables: In the same pot, add diced onions and minced garlic. Sauté for 2-3 minutes until the onions are translucent.
