4 medium zucchinis

1 lb ground beef or turkey

1 packet taco seasoning (or homemade: cumin, chili powder, garlic powder, onion powder)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1/2 cup sour cream

1 avocado, diced

Fresh cilantro for garnish

Lime wedges for serving

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Slice each zucchini in half lengthwise and scoop out the seeds using a teaspoon to create a boat shape. Lightly season the insides with salt and pepper.

      Cook the Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if needed.

        Season the Filling: Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir well and cook for an additional 5-7 minutes, allowing the flavors to meld. Taste and adjust seasoning if necessary.
