Ingredients

2 cups elbow macaroni

1 medium butternut squash, peeled and diced

1 cup broccoli florets

1 cup shredded carrots

1 cup frozen peas

3 cups vegetable broth

1 can (12 oz) evaporated milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Prep the Vegetables: Begin by peeling and dicing the butternut squash into small cubes. This will allow it to cook evenly and blend into the cheese mixture beautifully.

Combine Ingredients in the Crockpot: In a large crockpot, add the elbow macaroni, diced butternut squash, broccoli florets, shredded carrots, and frozen peas.

Add the Liquids: Pour in the vegetable broth and evaporated milk. Stir the mixture gently to combine all ingredients evenly.

Season It Up: Sprinkle garlic powder, onion powder, paprika, salt, and pepper over the mixture. Mix everything together until well combined.

Cook: Cover the crockpot and set it to cook on low for about 4-5 hours or on high for about 2-3 hours. Make sure to stir every hour to ensure even cooking and to prevent sticking.

Add the Cheese: Once the vegetables and pasta are tender, add the shredded sharp cheddar and mozzarella cheese. Stir well until the cheese has melted and is creamy. If the mixture is too thick, you can add a bit more vegetable broth or evaporated milk to get your desired consistency.

Taste and Adjust: Check for seasoning and adjust salt and pepper if necessary.

Serve: Once everything is well combined and creamy, spoon the mac and veggie cheese into bowls. Garnish with fresh parsley for a pop of color and extra flavor.

Enjoy: This comforting dish can be served warm and pairs perfectly with a side salad. Enjoy the cozy flavors of fall in every bite!
