Fall Crockpot Sausage and Sweet Potato Stew

1 lb smoked sausage (such as kielbasa or andouille), sliced

2 medium sweet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

3 cups vegetable or chicken broth

1 can (15 oz) diced tomatoes, undrained

1 cup carrots, sliced

1 cup celery, chopped

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp smoked paprika

Salt and pepper, to taste

2 cups fresh spinach (optional, for serving)

1 tbsp olive oil (for browning sausage)

Instructions
 

Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 4-5 minutes. This step enhances the flavor profile of the stew.

    Prepare the Slow Cooker: Transfer the browned sausage to the crockpot. Add the diced sweet potatoes, chopped onion, minced garlic, sliced carrots, and chopped celery.

      Add Liquids & Seasoning: Pour in the broth and add the can of diced tomatoes (with juices). Stir in the dried thyme, rosemary, smoked paprika, salt, and pepper. Mix everything well.
