Prepare the Meatball Mixture: In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, parsley, egg, salt, pepper, and thyme. Mix until all ingredients are evenly incorporated.
Shape the Meatballs: Preheat your oven to 400°F (200°C). Using your hands, form the mixture into bite-sized meatballs, about 1 inch in diameter. Place them on a lined baking sheet, leaving some space between each meatball.
Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and cooked through.
Prepare the Cranberry Glaze: While the meatballs are baking, in a small saucepan over medium heat, combine cranberry sauce, soy sauce, apple cider vinegar, honey, and red pepper flakes (if using). Stir until the sauce is well combined and heated through.
Glaze the Meatballs: Once the meatballs are cooked, transfer them to a large mixing bowl. Pour the cranberry glaze over the meatballs and gently toss until they are well coated.
Serve: Serve the glazed meatballs warm, garnished with additional chopped parsley if desired. They can be enjoyed as an appetizer, in a sub sandwich, or over a bed of rice for a complete meal.
Notes
Best served warm, can be garnished with additional parsley.
