Feta and Tomato Baked Pasta

12 oz (340 g) pasta (penne or rigatoni work well)

14 oz (400 g) cherry tomatoes, halved

8 oz (225 g) feta cheese, block or crumbled

3 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional, for heat)

Salt and freshly ground black pepper, to taste

2 cups fresh spinach, roughly chopped

1/4 cup fresh basil, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, and olive oil. Season with dried oregano, red pepper flakes, salt, and pepper. Toss to combine.

        Add Feta: Place the block of feta cheese (if using) in the center of the tomato mixture. If crumbled, sprinkle it evenly over the tomato mixture.

          Bake: Bake in the preheated oven for about 20-25 minutes, or until the tomatoes are bursting and the feta is golden and slightly crispy on top.

            Combine with Pasta: Remove the baking dish from the oven. Carefully stir the tomato and feta mixture together to create a creamy sauce. Add the cooked pasta and chopped spinach, tossing everything together until the spinach has wilted and the pasta is well coated.

              Final Touches: If using Parmesan cheese, sprinkle it over the top. Return to the oven for an additional 5-10 minutes, until heated through.
