12 ounces rigatoni pasta

1 cup feta cheese, crumbled

1 cup dried cranberries

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup cucumber, diced

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: A handful of toasted walnuts or pecans for crunch

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste.

      Combine ingredients: In a large mixing bowl, add the cooled rigatoni, crumbled feta cheese, dried cranberries, halved cherry tomatoes, chopped red onion, diced cucumber, and fresh basil.
