Fiery Buffalo Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper

Salt and pepper to taste

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup diced avocado

¼ cup fresh cilantro, chopped

½ cup crumbled feta or vegan cheese (optional)

Lime wedges for serving

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Add water gradually until you reach a thick batter consistency.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well-coated, then place them evenly on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

          Add Buffalo Sauce: Once baked, remove the cauliflower from the oven and toss the hot florets in buffalo sauce until well-coated. Return to the oven and bake for an additional 5-10 minutes to let the sauce set.

            Prepare the Tortillas: While the cauliflower is baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
