Fiery Buffalo Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk for dairy-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup buffalo sauce (adjust for spice preference)

8 small corn tortillas

1 avocado, sliced

½ cup purple cabbage, thinly sliced

¼ cup fresh cilantro, chopped

Preheat Oven: Start by preheating your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add in the buttermilk until you have a smooth batter.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's evenly coated. Shake off any excess batter and place the florets on the prepared baking sheet in a single layer.

        Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy.
