Ingredients

2 lbs chicken wings

1 ripe mango, peeled and diced

2-3 fresh habanero peppers, seeds removed (adjust based on heat preference)

1/4 cup honey

1/4 cup soy sauce

2 tablespoons lime juice

1 tablespoon apple cider vinegar

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Instructions

Preheat your oven: Set your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top to allow the air to circulate around the wings.

Prepare the marinade: In a blender, combine the diced mango, habanero peppers, honey, soy sauce, lime juice, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Blend until you achieve a smooth consistency.

Marinate the wings: Place the chicken wings in a large bowl or resealable plastic bag. Pour half of the mango habanero mixture over the wings, reserving the other half for basting later. Toss the wings until they are well-coated. Cover or seal and refrigerate for at least 1 hour, up to overnight for maximum flavor.

Bake the wings: After marination, arrange the chicken wings in a single layer on the wire rack. Bake in the preheated oven for 30 minutes.

Baste the wings: After 30 minutes, remove the wings from the oven and brush them with the reserved mango habanero sauce. Return the wings to the oven and continue baking for an additional 15-20 minutes, or until the wings are crispy and cooked through, with an internal temperature of 165°F (74°C).

Serve: Once done, remove the wings from the oven and let them cool slightly. Garnish with freshly chopped cilantro for a burst of flavor. Serve hot with your favorite dipping sauce, such as ranch or blue cheese, if desired.
