Firecracker Chicken Wraps

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

3 tablespoons soy sauce

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 garlic clove, minced

1 teaspoon ginger, grated

1 bell pepper, thinly sliced (red or yellow)

1 cup shredded carrots

1 green onion, sliced

4 large tortilla wraps (flour or whole wheat)

1 cup lettuce leaves (butter, romaine, or your choice)

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine olive oil, soy sauce, sweet chili sauce, sriracha, minced garlic, and grated ginger. Add the chicken pieces, making sure they're well-coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Heat a skillet or frying pan over medium-high heat. Once hot, add the marinated chicken, cooking for about 5-7 minutes until golden brown and cooked through. Stir occasionally to ensure even cooking.

      Add Veggies: After the chicken is fully cooked, add the sliced bell pepper and shredded carrots to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are slightly tender but still crunchy.

        Assemble the Wraps: Lay the tortilla wraps flat. Start by placing a handful of lettuce on each wrap, followed by a generous portion of the firecracker chicken mixture. Top with sliced green onions and sprinkle with sesame seeds. Add fresh cilantro if desired.

          Wrap It Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom. Secure with a toothpick if needed.

            Serve: Slice each wrap in half diagonally and arrange them on a serving platter. Serve immediately with extra sweet chili sauce or sriracha on the side for dipping.
