Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (room temperature)

1 large egg (room temperature)

2 tablespoons unsalted butter, melted (plus extra for the skillet)

1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Prepare Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth and homogenous.

Combine: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine for fluffy pancakes!

Heat the Skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly brush with melted butter to prevent sticking.

Cook the Pancakes: Using a 1/4 cup measure, scoop the batter onto the skillet. Cook until bubbles form on the surface, about 2–3 minutes. Flip carefully and cook for another 2–3 minutes, or until golden brown and cooked through.

Serve Warm: Remove from the skillet and keep warm in a low oven while you repeat with the remaining batter. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream!
