12 oz (340g) pasta (rigatoni or penne)

1 lb (450g) ground beef

3 medium yellow onions, thinly sliced

3 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons Dijon mustard

2 cups shredded Gruyère cheese (divided)

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Pasta: Preheat your oven to 375°F (190°C). In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

    Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown. Add the minced garlic for the last 2 minutes of cooking.

      Cook the Beef: Push the onions to one side of the skillet and add the ground beef to the vacant side. Cook until the beef is browned, breaking it into small pieces as it cooks. Drain any excess fat.

        Combine Flavors: Add the beef broth, Worcestershire sauce, Dijon mustard, and dried thyme to the skillet with the beef and onions. Season with salt and pepper to taste. Stir everything together and let it simmer for about 5 minutes.

          Mix Pasta and Sauce: In a large bowl, combine the cooked pasta and the beef-onion mixture. Add 1 cup of Gruyère cheese and stir until everything is well mixed.

            Assemble the Bake: Transfer the pasta mixture to a greased 9x13-inch baking dish. Top with the remaining Gruyère cheese and the mozzarella cheese, spreading evenly over the top.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
