Fresh Caprese Pasta Salad

8 oz fusilli or rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly torn

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1 clove garlic, minced

Salt and freshly cracked black pepper, to taste

1/4 cup pine nuts, toasted (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil. If using, add the toasted pine nuts for a bit of crunch.

        Dress the Salad: Pour the dressing over the pasta mixture and gently toss until everything is evenly coated. Be careful not to break the mozzarella balls while mixing.

          Chill and Serve: Let the salad sit at room temperature for about 15 minutes to develop flavors, or refrigerate it for up to 1 hour for a chilled salad. Toss again before serving, and adjust seasoning if necessary.
