Ingredients

4 cups of fresh watermelon, diced

1 cup of crumbled feta cheese

1/2 cup of red onion, thinly sliced

1/4 cup of fresh mint leaves, chopped

1 lime, juiced (about 2 tablespoons of juice)

2 tablespoons of olive oil

Salt and pepper to taste

Optional: 1/4 teaspoon of red pepper flakes for a spicy kick

Instructions

In a large mixing bowl, add the diced watermelon, crumbled feta cheese, and thinly sliced red onion.

In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and red pepper flakes (if using) until well combined.

Pour the dressing over the watermelon mixture and gently toss to coat all the ingredients evenly.

Add the chopped mint leaves and give it another gentle toss, ensuring the mint is evenly distributed.

Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld together.

Serve chilled or at room temperature, garnished with additional mint leaves if desired.
