1 cup ricotta cheese

1 cup grated mozzarella cheese

¼ cup freshly grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 tablespoon fresh basil, chopped (plus extra for garnish)

1 teaspoon fresh thyme leaves

Salt and pepper, to taste

1 egg, beaten (for egg wash)

A pinch of red pepper flakes (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry into a rectangular shape that fits your tart pan. Transfer the pastry to the tart pan, trimming any excess, and prick the base gently with a fork to prevent it from puffing up during baking.

      Make the Cheese Mixture: In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, fresh basil, thyme, olive oil, balsamic vinegar, salt, and pepper. Mix until combined and creamy.

        Assemble the Tart: Spread the cheese mixture evenly over the tart base. Layer the sliced tomatoes on top of the cheese mixture in a circular pattern, slightly overlapping them.
