Ingredients

4 ripe bananas

1 cup coconut cream (chilled)

1/2 cup unsweetened shredded coconut

1/4 cup honey or maple syrup (adjust according to sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1/4 cup almond flour (optional, for added texture)

Extra shredded coconut for topping

Instructions

Prepare the Bananas: Peel the ripe bananas and place them in a blender or food processor. Blend until smooth and creamy. This will form the base of your filling.

Mix the Coconut Cream: In a separate bowl, whisk together the chilled coconut cream, honey or maple syrup, vanilla extract, and sea salt until well combined and creamy.

Combine Ingredients: In the blender with the banana mixture, add the whipped coconut cream and the unsweetened shredded coconut. If using almond flour for texture, add that as well. Blend gently until everything is fully integrated, but avoid over-blending to keep some texture.

Prepare the Pan: Line an 8x8 inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Pour the Mixture: Pour the banana-coconut mixture into the prepared pan and spread it out evenly. Smooth the top with a spatula.

Freeze: Cover the pan with plastic wrap or foil and place in the freezer for at least 4-6 hours, or until completely firm. This is perfect for overnight freezing if you're preparing ahead of time.

Cut into Squares: Once frozen solid, lift the set mixture out of the pan using the parchment paper. Place on a cutting board and cut into squares of your desired size.

Topping Off: Sprinkle additional shredded coconut on top of each square for extra flavor and garnish.

Serve and Store: Serve immediately or place squares in an airtight container, separating layers with parchment paper. Keep them stored in the freezer for a refreshing treat anytime.
