Frozen Carrot Cake Energy Bars

1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/2 tsp vanilla extract

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger powder

1/2 cup chopped walnuts (or pecans)

1/4 cup raisins (optional)

1/4 cup unsweetened shredded coconut (optional)

Pinch of salt

Instructions
 

Prep the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), applesauce, and vanilla extract. Stir until smooth and well-combined.

      Add Dry Ingredients: To the wet mix, add the grated carrots, rolled oats, cinnamon, nutmeg, ginger powder, and a pinch of salt. Stir until fully incorporated.

        Incorporate Nuts and Fruits: Gently fold in the chopped walnuts, raisins, and shredded coconut until evenly distributed throughout the mixture.

          Transfer to Dish: Pour the mixture into the prepared baking dish. Using a spatula or your hands, press it firmly and evenly into the dish so that it’s compact. The firmer you press it, the better it will hold together once frozen.

            Freeze: Place the baking dish in the freezer for at least 2 hours, or until completely solid.

              Cut into Bars: Once set, take the dish out of the freezer. Use the parchment paper to lift the entire block out of the dish. Place it on a cutting board and cut it into your desired bar size (8-12 bars depending on thickness).

                Store: Wrap each bar individually in plastic wrap or store them in an airtight container. They can be returned to the freezer for long-term storage, or kept in the fridge for a week.
