1 cup unsweetened shredded coconut

1 cup coconut cream (chilled)

¾ cup sweetened condensed milk

½ cup fresh lime juice (about 4-5 limes)

Zest of 2 limes

1 teaspoon vanilla extract

¼ teaspoon sea salt

1 cup graham cracker crumbs (optional, for crust)

4 tablespoons unsalted butter (melted, optional, for crust)

Fresh lime slices and toasted coconut flakes (for garnish)

Instructions
 

Prepare the Crust (Optional):

    - If opting for a crust, preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the graham cracker crumbs and melted butter until well combined. Press this mixture evenly into the bottom of an 8x8 inch (or similar size) baking dish.

        - Bake for 8-10 minutes until lightly golden. Allow to cool completely.

          Make the Coconut Lime Filling:

            - In a large mixing bowl, combine the chilled coconut cream, sweetened condensed milk, fresh lime juice, lime zest, vanilla extract, and sea salt.

              - Whisk together until the mixture is smooth and creamy. Make sure there are no lumps.

                Combine with Shredded Coconut:

                  - Fold in the unsweetened shredded coconut into the lime mixture until evenly incorporated.

                    Assemble:

                      - Pour the coconut lime filling over the cooled crust, or directly into the baking dish if not using a crust. Smooth the top with a spatula.

                        Freeze:

                          - Cover the dish tightly with plastic wrap and place it in the freezer. Allow it to freeze for at least 4-6 hours, or until solid.
