1 cup plain Greek yogurt

1 cup cream cheese, softened

1/2 cup honey or maple syrup

1/4 cup lemon juice (freshly squeezed preferably)

Zest of 2 lemons

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup crushed graham crackers

2 tablespoons melted butter

Fresh lemon slices and mint leaves for garnish (optional)

Prepare the Graham Crust: In a bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of silicone muffin cups or paper liners, creating a layer about 1/4 inch thick. Place the cups in the freezer to set while you make the filling.

    Make the Cheesecake Filling: In a large mixing bowl, combine the softened cream cheese and Greek yogurt. Use a hand mixer or a stand mixer to blend until creamy and smooth.

      Add Sweetness and Flavor: To the cream cheese mixture, add the honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Mix again until all ingredients are well combined and the filling is smooth.

        Fill the Cups: Remove the crust cups from the freezer. Spoon the cheesecake filling over the graham crusts, filling each cup to the top. Tap them gently on a countertop to remove any air bubbles.
