Ingredients

2 ripe mangoes, peeled and diced

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tablespoon fresh lime juice

A pinch of salt

Optional: 1/2 cup coconut milk for a creamier texture

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Mangoes: Begin by peeling and chopping the ripe mangoes into small pieces. Reserve a handful for garnish if desired.

Blend the Mixture: In a blender or food processor, add the diced mangoes, Greek yogurt, honey (or maple syrup), lime juice, and salt. If you want a creamier texture, add the coconut milk. Blend until the mixture is completely smooth and well combined.

Taste and Adjust: Taste the mixture and add more honey or lime juice if required, according to your preference for sweetness and tartness.

Pour into Molds: Carefully pour the mango yogurt mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.

Add Garnish: If you have reserved some mango pieces, you can place a few in each mold before topping them off with the yogurt mixture for a colorful surprise!

Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered and upright.

Freeze: Transfer the molds to the freezer and freeze for at least 4-6 hours, or until completely solid.

Unmold and Serve: To release the popsicles, run the molds under warm water for a few seconds, then gently pull out the popsicles. Serve immediately and enjoy the refreshing tropical flavors! Garnish with fresh mint leaves if desired.
