Frozen Mocha Protein Pudding Pops

Ingredients
  

1 cup cold brewed coffee

1 cup unsweetened almond milk (or any milk of choice)

1 scoop chocolate protein powder (vanilla works too!)

2 tablespoons cocoa powder

2 tablespoons maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Optional toppings: crushed dark chocolate, chopped nuts, or a sprinkle of cocoa nibs

Instructions
 

In a medium mixing bowl, combine the cold brewed coffee and almond milk. Whisk until well blended.

    Add the chocolate protein powder, cocoa powder, maple syrup, vanilla extract, and a pinch of sea salt to the bowl. Mix well until all ingredients are combined smoothly and there are no lumps.

      Taste the mixture and adjust sweetness if necessary, adding a little more maple syrup if desired.

        Once the mixture is smooth, pour it into your popsicle molds, leaving a small gap at the top to allow for expansion while freezing.

          Insert sticks into each mold and place in the freezer. Allow to freeze for at least 4 hours, or until completely solid.

            To remove the pops, run warm water over the outside of the molds for a few seconds until they loosen up.

              Carefully pull out the popsicles and add any optional toppings by dipping the tops into the toppings or sprinkling them over the pops while they're still slightly wet.
