2 cups plain Greek yogurt

1/4 cup cocoa powder

1/3 cup honey or maple syrup (adjust for sweetness)

1 tablespoon instant coffee granules (or espresso powder)

1 teaspoon vanilla extract

A pinch of salt

For the Sandwich Bars:

1 cup rolled oats

1/2 cup almond flour (or any nut flour)

1/4 cup cocoa powder

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1/2 teaspoon baking powder

1/2 teaspoon vanilla extract

A pinch of salt

1/3 cup semi-sweet chocolate chips (optional)

For Garnish:

Chocolate shavings or cocoa nibs

Crushed nuts (optional)

Instructions
 

Prepare the Yogurt Filling:

    - In a medium mixing bowl, whisk together the Greek yogurt, cocoa powder, honey (or maple syrup), instant coffee granules, vanilla extract, and salt until smooth and well-combined.

      - Taste and adjust sweetness if necessary. Once satisfied, set aside.

        Make the Sandwich Bars Base:

          - Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.

            - In a large bowl, mix the rolled oats, almond flour, cocoa powder, melted coconut oil, honey (or maple syrup), baking powder, vanilla extract, and salt until the mixture is fully combined. If desired, fold in the chocolate chips for added texture.

              - Spread the mixture evenly into the prepared baking dish, pressing it firmly into the bottom to create an even layer.

                Bake the Base:

                  - Bake in the preheated oven for about 15-20 minutes, or until the edges are slightly golden. Remove from the oven and allow to cool completely in the pan.

                    Assemble the Bars:

                      - Once the base is completely cooled, spread the mocha yogurt filling evenly over the top of the cooled base.

                        Freeze the Bars:

                            Cut and Serve:

                                  Store:
