Ingredients
  

For the crust:

1 cup almond flour

1/4 cup coconut oil, melted

2 tablespoons honey or maple syrup

1/4 teaspoon salt

For the filling:

2 cups Greek yogurt (plain or vanilla)

1 cup fresh or frozen raspberries (thawed if frozen)

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

For garnish:

Fresh raspberries

Mint leaves

A dusting of powdered sugar (optional)

Instructions
 

Prepare the crust:

    - In a mixing bowl, combine almond flour, melted coconut oil, honey (or maple syrup), and salt. Mix until a crumbly dough forms.

      - Press the mixture firmly into the bottom of a tart pan (or a standard muffin tin for individual tarts) to form an even crust. Chill in the fridge while you prepare the filling.

        Make the filling:

          - In a separate bowl, combine Greek yogurt, raspberries, honey (or agave), vanilla extract, and lemon juice. Use a fork or a whisk to gently mash the raspberries into the yogurt until combined. The mixture can remain slightly chunky for added texture.

            Assemble the tarts:

              - Remove the crust from the fridge and spoon the raspberry yogurt filling evenly over the chilled crust. Smooth the top with a spatula.

                Freeze:

                  - Cover the tarts with plastic wrap and place them in the freezer for at least 4 hours, or until completely firm.

                    Serve:

                      - When ready to serve, remove the tarts from the freezer and let them sit at room temperature for a few minutes to soften slightly.

                        - Garnish with fresh raspberries, mint leaves, and a light dusting of powdered sugar if desired.
