2 cups fresh strawberries, hulled and sliced

1 can (13.5 oz) full-fat coconut milk

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

1 tablespoon lime juice

A pinch of salt

Blend the Strawberries: In a blender, add the sliced strawberries and blend until smooth. You can leave some small chunks if you prefer a bit of texture.

    Make the Coconut Mixture: In a mixing bowl, combine the coconut milk, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt. Whisk until well combined and smooth.

      Layer the Mixtures: Take your popsicle molds and pour in a few tablespoons of the coconut mixture until they are about a third full. Then, add a layer of the strawberry puree on top, filling the molds about two-thirds full.

        Continue Layering: Repeat the layers, alternating between the coconut mixture and the strawberry puree, until the molds are almost full, leaving a little space at the top. You can use a toothpick to swirl the two mixtures together for a marbled effect.

          Insert Sticks: Place the popsicle sticks in the center of each mold and press down gently so they stay in place.

            Freeze: Cover the molds and place them in the freezer. Freeze for at least 4-6 hours, or until completely solid.

              Unmold the Pops: Once frozen, remove the pops from the molds by running them under warm water for a few seconds to loosen. If desired, roll them in shredded coconut before serving.
