2 cups frozen strawberries, thawed and roughly chopped

1/2 cup fresh lemon juice (about 2-3 lemons)

1 cup granulated sugar (adjust based on sweetness preference)

1 cup heavy cream

1 teaspoon vanilla extract

Zest of 1 lemon

Pinch of salt

Optional: fresh mint leaves for garnish

Prepare the Strawberries: In a medium bowl, combine the thawed and chopped strawberries with half the sugar. Mix gently and set aside for about 10 minutes to allow the strawberries to release their juices.

    Make the Lemon Cream Mixture: In another large mixing bowl, add the heavy cream, the remaining sugar, fresh lemon juice, vanilla extract, lemon zest, and a pinch of salt. Using an electric mixer, whip the cream mixture on medium-high speed until soft peaks form, about 3-5 minutes. Be careful not to overwhip!

      Combine the Mixtures: Gently fold the strawberry mixture into the whipped cream, being careful not to deflate the cream too much. The goal is to have the strawberries evenly distributed through the creamy mixture.
