Ingredients

4 cups of seedless watermelon, cut into chunks

2 tablespoons of honey or agave syrup (adjust for sweetness)

1 tablespoon of fresh lime juice

1/2 cup of coconut water (optional, for extra hydration)

A pinch of sea salt

Popsicle molds

Sticks or skewers (if not included in the molds)

Instructions

Prepare the Watermelon: Start by cutting the watermelon into small chunks, removing any seeds if there are any. This helps ensure a smooth blend and delightful texture.

Blend the Mixture: In a blender, combine the watermelon chunks, honey (or agave syrup), lime juice, coconut water, and a pinch of sea salt. Blend until the mixture is completely smooth and vibrant; about 30 seconds to a minute.

Taste and Adjust: After blending, taste the mixture to see if it meets your sweetness preference. Add more honey or lime juice if desired, then blend again briefly.

Fill the Molds: Carefully pour the watermelon mixture into popsicle molds, leaving a little room at the top for expansion during freezing. If you like, you can add fresh mint leaves or small pieces of fruit into the molds for a fun twist!

Insert Sticks: If your molds don’t come with built-in sticks, insert the wooden sticks or skewers into the center of each mold.

Freeze: Place the filled molds in the freezer. Freeze for a minimum of 4-6 hours or until the pops are solid.

Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops from the molds.

Enjoy: Serve immediately or store the pops in a sealed container in the freezer for later enjoyment!
