Ingredients

1 cup almond butter (smooth)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 1/2 cups rolled oats

1/2 cup dark chocolate chips (optional)

1 cup Greek yogurt (plain or vanilla flavored)

2 tablespoons unsweetened cocoa powder (optional for chocolate layer)

1/4 cup sliced almonds (for garnish)

Instructions

Mix the Base: In a large mixing bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and sea salt. Mix well until smooth and creamy.

Add Oats: Gradually stir in the rolled oats until fully incorporated. The mixture should be thick and sticky.

Form Cookie Bites: Using a tablespoon or a small cookie scoop, portion out the mixture and roll it into small balls (about 1-inch in diameter). Place them on a parchment-lined baking sheet.

Add Chocolate (Optional): If you’re using chocolate chips, press a few into the top of each cookie bite. Alternatively, for a chocolate layer, melt dark chocolate chips and drizzle over the top.

Freeze: Place the baking sheet with the cookie bites in the freezer for about 30 minutes, or until they are firm.

Dip in Yogurt: In a separate bowl, mix the Greek yogurt with cocoa powder (if using), creating a smooth mixture. Once the cookie bites are firm, dip each one in the yogurt mixture, coating them evenly.

Garnish and Freeze Again: After dipping, return the bites to the parchment-lined baking sheet. Sprinkle sliced almonds on top of each before placing them back into the freezer for another hour to set.

Serve and Enjoy: Once completely frozen, your Frozen Yogurt Almond Butter Cookie Bites are ready to enjoy! Store any leftovers in an airtight container in the freezer.
