Ingredients

1 cup Greek yogurt (vanilla flavored)

1 large apple (peeled, cored, and diced)

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 1/2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 large eggs

1/4 cup melted butter

Cooking spray or oil for frying

Whipped cream (for serving, optional)

Crushed graham crackers (for garnish, optional)

Instructions

Prepare the Apple Filling: In a medium bowl, combine the diced apple, brown sugar, cinnamon, nutmeg, and lemon juice. Toss well and let it sit for 10-15 minutes to macerate and release some juices.

Make the Donut Batter: In another bowl, whisk together the flour, granulated sugar, baking powder, and salt. In a separate bowl, mix the milk, eggs, and melted butter until combined. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the apple mixture (including any juices).

Shape the Donut Coins: Lightly grease a donut pan (or mini muffin tin if no donut pan is available). Fill each cavity about 2/3 full with the batter. If using a muffin tin, create a small indentation in the center of each for filling later.

Bake the Donuts: Preheat your oven to 350°F (175°C) and bake for 12-15 minutes or until the donuts are golden and a toothpick inserted comes out clean. Allow them to cool slightly before removing from the pan.

Prepare the Frozen Yogurt Filling: While the donuts are cooling, spoon your Greek yogurt into a mixing bowl. If desired, add a dash of cinnamon or vanilla extract to enhance flavor. You can also fold in finely chopped apples or a bit of the apple filling for added texture.

Assemble the Donut Coins: Once the donuts are completely cool, use a small spoon or piping bag to fill the center of each donut coin with a generous amount of the frozen yogurt mixture. Alternatively, you can create a layer of yogurt on top if you prefer.

Chill the Assembled Coins: Place the filled donuts in the freezer for at least 1 hour to allow the frozen yogurt to set and firm up.

Serve and Garnish: Once frozen, remove the donut coins from the freezer. If desired, serve them with a dollop of whipped cream and sprinkle with crushed graham crackers for an extra touch of flavor and texture.
