Ingredients

1 cup of graham cracker crumbs

1/4 cup of melted coconut oil (or butter)

1/4 cup of sugar

1 cup of cream cheese, softened

1 cup of plain Greek yogurt

1/2 cup of honey or maple syrup

1 tablespoon of vanilla extract

1/2 cup of mixed berries (blueberries, raspberries, and chopped strawberries)

Zest of 1 lemon (optional)

A pinch of salt

Instructions

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted coconut oil (or butter), and sugar until well combined. The mixture should resemble wet sand. Press this mixture firmly into a lined muffin tin, filling each cavity about halfway. Place the tin in the freezer while preparing the filling.

Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy, using an electric mixer on medium speed. Add the Greek yogurt, honey (or maple syrup), vanilla extract, lemon zest, and a pinch of salt. Continue mixing until everything is well combined and fluffy.

Incorporate the Berries: Gently fold in the mixed berries, being careful not to mash them too much. You want to maintain their shape for that fresh burst of flavor.

Assemble the Coins: Remove the crust from the freezer. Spoon the cheesecake filling over the crusts in the muffin tin, filling each cavity to the top. Smooth the tops with a spatula.

Freeze: Return the muffin tin to the freezer and let the cheesecake coins set for at least 4 hours or until completely frozen.

Serve: Once frozen, remove the muffin tin from the freezer and carefully pop out each cheesecake coin. Let them sit at room temperature for about 5 minutes before serving, as they will be easier to eat. You can garnish with a few extra berries or a drizzle of honey if desired.

Enjoy: Indulge in your delightful Frozen Yogurt Berry Cheesecake Coins!
