1 cup Greek yogurt (plain or flavored)

1 cup fresh blueberries (or frozen, thawed)

4 slices of whole wheat or regular bread

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

½ teaspoon cinnamon

A pinch of salt

Optional toppings: granola, chopped nuts, or sliced fruits

Prepare the Toast Cups: Preheat your oven to 375°F (190°C). Trim crusts off the bread slices and gently press each slice into the cups of a muffin tin to create little bowls. Bake for about 10-12 minutes or until the edges are golden brown. Allow them to cool completely.

    Make the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, cinnamon, and a pinch of salt. Stir well until everything is smoothly mixed.

      Assemble the Cups: Once the toast cups have cooled, spoon a generous amount of the yogurt mixture into each cup, filling them about three-quarters full.

        Add Blueberries: Top each yogurt-filled toast cup with fresh blueberries. If you’re using thawed frozen blueberries, lightly pat them dry before placing them on top.
