Ingredients

1 cup plain Greek yogurt

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup dark chocolate chips

1 tablespoon coconut oil

A pinch of sea salt

Optional toppings: crushed peanuts, shredded coconut, or sprinkles

Instructions

In a medium mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth and well combined.

Using a silicone mold (or mini muffin tin lined with cupcake liners), scoop the yogurt mixture into each cavity, filling them about 3/4 full.

Place the filled molds in the freezer and allow them to set for about 2 to 3 hours, or until firm.

While the yogurt bombs are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between until melted and smooth.

Once the yogurt bombs are set, remove them from the molds carefully. Dip each bomb into the melted chocolate, allowing any excess chocolate to drip off.

Optionally, while the chocolate is still wet, sprinkle your choice of toppings, such as crushed peanuts, shredded coconut, or sprinkles on top.

Place the chocolate-coated yogurt bombs back on a parchment-lined baking sheet and return them to the freezer for an additional 30 minutes to set the chocolate coating.

Once the chocolate is firm, store the bombs in an airtight container in the freezer. Enjoy them straight from the freezer or let them sit for a few minutes to soften slightly before indulging!
