Ingredients

1 cup rolled oats

1/2 cup almond flour

1/4 cup shredded unsweetened coconut

1/4 cup brown sugar (packed)

1/4 cup coconut oil (melted)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

2 cups yogurt (plain or coconut-flavored)

1/2 cup canned coconut milk (chilled)

1/4 cup honey or maple syrup

1/3 cup dark chocolate chips (optional)

Fresh berries or sliced fruit for topping (optional)

Instructions

Prepare the Base: Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, almond flour, shredded coconut, brown sugar, melted coconut oil, vanilla extract, and sea salt. Mix well until all ingredients are evenly incorporated.

Bake the Base: Line an 8x8 inch baking dish with parchment paper. Press the oat mixture firmly into the bottom of the dish to create an even layer. Bake in the preheated oven for 15-20 minutes or until lightly golden brown. Remove from the oven and let it cool completely.

Make the Frozen Yogurt Mixture: In a large bowl, whisk together yogurt, chilled coconut milk, and honey or maple syrup until smooth and well combined. If you want a little indulgence, fold in the dark chocolate chips.

Assemble the Bars: Once your base has cooled, pour the frozen yogurt mixture over the baked oatmeal layer. Spread it out evenly.

Freeze: Cover the baking dish with plastic wrap and place it in the freezer for at least 4 hours, or until the yogurt layer is firm.

Cut and Serve: Once frozen, lift the bars out using the parchment paper. Cut into squares or rectangles. If desired, top with fresh berries or sliced fruit before serving. Enjoy your refreshing coconut cookie bars!
