2 cups fresh pineapple chunks (or canned, drained)

1 cup Greek yogurt (plain or vanilla)

¼ cup honey or agave syrup (adjust for sweetness)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

½ cup shredded coconut (optional, for topping)

A pinch of salt

2 tablespoons chopped fresh mint (optional, for garnish)

Instructions
 

Blend the Ingredients: In a high-speed blender or food processor, combine the fresh pineapple chunks, Greek yogurt, honey or agave syrup, lime juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

    Taste and Adjust: Taste the mixture and adjust the sweetness if necessary by adding more honey/agave or more pineapple if it’s too sweet.

      Prepare the Mold: Line an 8x8 inch baking dish or a silicone mold with parchment paper for easy removal.

        Pour and Smooth: Pour the blended mixture into the prepared dish or mold. Use a spatula to smooth the top evenly.

          Add Toppings: If desired, sprinkle shredded coconut over the top for added texture and flavor.

            Freeze: Place the dish in the freezer and let it freeze for at least 4 hours, or until solid.

              Cut into Bars: Once frozen, remove from the freezer and let it sit for a few minutes to soften slightly. Use a sharp knife to cut into bars or squares.
