2 cups Greek yogurt (plain or vanilla)

1 cup shelled pistachios (roasted and unsalted)

10-12 Medjool dates, pitted

1 tablespoon honey (optional, for sweetness)

1 teaspoon vanilla extract

A pinch of salt

1/4 cup mini chocolate chips (optional)

Prep the Pistachios: Roughly chop the shelled pistachios and set aside a few for topping later.

    Prepare the Dates: In a food processor, blend the Medjool dates into a smooth paste. If the dates are too firm, soak them in warm water for 10 minutes to soften them before blending.

      Mix the Base: In a large mixing bowl, combine the Greek yogurt, date paste, honey (if using), vanilla extract, and a pinch of salt. Stir until well combined and smooth.

        Add the Pistachios: Gently fold the chopped pistachios into the yogurt mixture, reserving a small amount to sprinkle on top later if desired.

          Fill the Molds: Pour the mixture evenly into popsicle molds, tapping them gently to remove any air bubbles. Leave a little space at the top, as the mixture will expand when it freezes.

            Insert Sticks: If your molds come with sticks, insert them now. If not, you can use small pieces of parchment paper or wooden sticks held in place with aluminum foil.

              Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until solid.

                Pop Them Out: Once frozen, remove the pops from the molds by running them under warm water for a few seconds to loosen them.

                  Add Extra Toppings (Optional): If desired, dip the top of each pop into melted chocolate and then sprinkle with the reserved pistachios or mini chocolate chips before the chocolate sets.

                    Serve and Enjoy: Serve immediately or store the pops in a ziplock bag or airtight container in the freezer for up to 2 weeks.
