Ingredients

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and sliced

1/2 cup granola (store-bought or homemade)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

A pinch of salt

Optional: Chocolate chips or nuts for topping

Instructions

Prepare the Strawberry Mixture: In a medium bowl, combine the sliced strawberries with honey (or maple syrup) and a pinch of salt. Toss to coat and let it sit for about 10 minutes to release some juice.

Mix Yogurt Base: In a separate bowl, combine the Greek yogurt with vanilla extract. Stir until smooth and creamy.

Combine Ingredients: Gently fold the marinated strawberries into the yogurt mixture, ensuring even distribution.

Add Granola: Carefully fold in the granola, making sure it's evenly mixed. You want some crunchy bits throughout the yogurt and strawberries.

Scoop and Shape: Line a baking sheet or a silicone mold with parchment paper. Using ice cream scoops or tablespoons, place rounded mounds of the mixture onto the sheet/mold, flattening them slightly into disc shapes.

Optional Toppings: If desired, sprinkle some chocolate chips or nuts on top of each disc for an extra delicious crunch.

Freeze: Carefully transfer to the freezer and freeze for at least 4 hours, or until solid.

Serve: Once frozen, remove the discs from the parchment paper or mold. Enjoy immediately, or store them in an airtight container in the freezer for later use.
